It’s Time to Bake with Your Kids!

We love creating sweet, yummy things in the kitchen.  Mmmmm…..the house smells so good!  Everyone eagerly waiting for the first tray of cookies or muffins to come out of the oven.

Well, Speak Life Badges’ fun loving Austin is at it again, creating goodness in the kitchen with eleven year old Brielle Stefan….who, by the way, is actually the creator of Austin’s recipes.  Yes, you read it right…Brielle is eleven and has created four beautiful recipes for Speak Life Badges “I Am Loved” Kids Journal all by herself.  She is super talented in the kitchen and dreams of one day opening her own bakery.

Here is Brielle’s all-time favorite recipe, her Lemon Cranberry Cookies.  The other three recipes that Brielle created can be found in Speak Life Badges “I Am Loved Journal” for kids.  These recipes are Glorious Morning Muffins, Cheese Crisps, and Sweet Pecan and Bacon French Toast Casserole.  The “I Am Loved Journal” for kids can be purchased in our on-line shop.

Lemon Cranberry Cookie Recipe

¾ cup sugar

½ cup butter, softened

1 egg

¼ cup lemon juice, freshly squeezed

1 cup flour

½ tsp baking soda

½ tsp salt

1 cup dried cranberry

What to Do:

Preheat oven to 350°F.

Beat sugar and butter together first with an electric mixer for about 10-15 seconds. 

Then beat in the egg.

Then add the lemon juice.

In a separate bowl, mix together the flour, baking soda and salt.

Then mix these dry ingredients into the butter sugar mixture. 
Stir in cranberries.

The cookie batter should be like playdough, not overly sticky and not crumbly.

Refrigerate batter for 10-15 minutes so that the batter can be scooped easily.

Form into balls and place onto cookie sheet lined with parchment paper.

Bake for 12-14 minutes at 350°F.
